
5 - Medium Sized Potatoes
1lb. - Bacon Cut into 1/2" pieces
1 - Large Onion - Diced
1 Tsp - Sugar
Wash & boil potatoes unpeeled until cooked but firm - let cool
Peel and dice potatoes and place in a large bowl
Fry bacon until crispy and leave bacon and drippings in skillet
Add the onion, diced pickles and 3/4 cup of pickle juice and saute' with bacon
Pour sauteed ingredients over the diced potatoes and blend thoroughly
Add minced parsley, salt and pepper to taste
Serve heated or at room temperature.
