2 cups dried pasta
1 can artichoke hearts
1/2 sliced red pepper
1/2 sliced yellow and orange pepper
1/2 cup sliced mushrooms or 10 asparagus spears cut in thirds
1 sliced yellow squash
1/4 cup shaved carrot (use peeler to slice thin)
1/2 cup red onion
1/4 cup olive oil X2
1/4 cup dry grated Romano cheese with Thyme added
This eleven ingredient dish is great served hot or cold for a filling side dish!
Boil the pasta, rinse, then coat with 1/4 cup of the olive oil. In a separate skillet, lightly soften the vegetables using the second 1/4 cup of olive oil. In a large serving bowl, toss the pasta and vegetables together. Add in your dry cheese and toss lightly one more time. You can serve this dish hot to the table or it works perfect as a cold salad!
