
Gold Record Gazpacho
Serves 4
2 # Yellow Heirloom Tomatoes, cored and diced
1 Small Sweet Yellow onion, diced
1 Large Yellow Summer Squash, diced
1 Yellow Bell Pepper, cored, seeded and diced
1 Garlic C love, sliced thinly
½ c Carrot Juice
3 T Red Wine Vinegar
2 T Extra-Virgin Olive Oil
Salt & Fresh Ground Pepper to taste
· Combine all ingredients in a large bowl, mixing well
· All mixture in a food processor, pulse until almost pureed
· Season with salt and pepper to taste
· Chill well
Garnish Ideas:
· Avocado diced small
· Fresh snipped Chives
· This Carrot Strips
· Sour Cream swirl
