
• 1 ½ pounds skirt steak
• 1 ½ cup low sodium soy sauce
• 20 cloves of peeled garlic
• ½ cup olive oil
• 1]2 Serrano peppers
• Endive and other assorted leaf lettuces
Cut skirt steak into narrow ½" strips. Place olive oil, soy sauce,

with 4 or 5 crushed cloves of garlic and 1]2 peppers finely chopped into a bag
and marinate for at least 30 to 60 minutes. Grill skirt steak strips on a hot grill
(cast iron hibachi grill) or on a cast iron grill pan. Grill remaining garlic cloves
until caramelized.
Serve wrapped in lettuce with garlic. Add hot sauce or other spices or chilies as
desired. The remaining marinade can be warmed in a small sauce pan and used
to drizzle on meat
Tin Chef Chuck's Cucumber Kim Chi
• 2 large cucumbers
• ½ cup garlic chili sauce (prepared or can be homemade)
Peel cucumbers and cut into 2 inch pieces. Quarter the pieces lengthwise and
marinade in garlic chili sauce. Chill in refrigerator before serving.
