
Balsamic Garden Pasta
Ingredients
2-3 cloves of garlic (minced)
Green pepper (sliced into bite-sized pieces)
Red pepper (sliced into bite-sized pieces)
Yellow or orange pepper (sliced into bite-sized pieces)
1 onion (sliced into bite-sized pieces)
Mushrooms (sliced into bite-sized pieces)
1/3 cup of balsamic vinegar
1/8 cup of olive oil
Spaghetti noodles
Salt and pepper to taste
Instructions
Slice vegetables into bite-sized pieces
Combine balsamic vinegar and olive oil in a bowl. Whisk. Put vegetables in bowl and pour marinade over vegetables. Let sit for half-hour to an hour. When vegetables are almost done marinating, pre-heat broiler and start spaghetti noodle water. Cook and drain spaghetti and set aside. When spaghetti is cooking, prepare vegetables for broiler. With a slotted spoon, take the vegetables out of the bowl and spread out on a cookie sheet. Place oven rack about 6 inches from broiler flame/element. Broil vegetables on that rack for approximately 5 – 6 minutes. Take vegetables off of cookie sheet and spoon atop already plated spaghetti noodles. Salt and pepper to taste.
