Heart Healthy Snack

1 tsp canola oil

¼ cup honey

¼ cup chopped walnuts

¼ cup chopped pecans

1 tsp Pumpkin Pie spice OR Apple Pie spice

2 cups multigrain or whole-grain cereal that involves oats (Quaker Oat Squares)

½ cup sweetened dried cranberries

¼ cup milled flaxseeds

 

  1. Line a baking sheet with aluminum foil, spray with non-stick cooking spray
  2. In a large non-stick skillet heat the tsp of oil over medium-high heat, swirling to coat the bottom of the pan.
  3. Add the honey and cook for roughly 2 minutes, or until it comes to a medium boil.
  4. Stir in the walnuts, pecans and spice. Cook for 3 minutes or until the mixture begins to turn golden, stirring constantly. Remove from the heat.
  5. Immediately stir in the cereal and dried fruit until well coated, about 30 seconds.
  6. Sprinkle the milled flax seeds over mixture and stir to incorporate them.
  7. Pour mixture onto the lined baking sheet; use the back of a spoon to smooth the mixture out into a thin layer.
  8. Cool completely (roughly 45 minutes), enjoy!

Makes roughly 10 – ½ cup servings
