Dinner for Four For Under $10 – October 11th

A perfect menu for a quick weeknight meal or your family tailgate celebration!  Kale chips add a light crunch and provide several immune-boosting vitamins and antioxidants that are important to stay well during cold and flu season.  Stop by your Meijer Pharmacy to get your flu shot and pick up a copy of your 2012 Wellness pocket calendar with nearly $70 in valuable coupons.

Tasty Turkey Burgers

Serves: 4

1 lb. lean ground turkey ($3.19)

½ cup chopped onions ($0.10)

2 tbsp. Meijer Worcestershire sauce (on-hand)

¼ cup Meijer rolled oats (on-hand)

¼ cup breadcrumbs (on-hand)

1 handful chopped fresh herbs or 2 tbsp. Gourmet Garden Italian Herbs ($0.80)

4 whole wheat hamburger buns ($1.60)

Avocado slices ($2.00)

In a large bowl, combine lean ground turkey, chopped onions, Worcestershire sauce, rolled oats, breadcrumbs, and fresh herbs.  Form into patties and grill on medium high heat for 4-5 minutes per side.  Place turkey burgers on whole wheat bun or specialty roll and top with sliced avocado. 

(Alternative: During last minute of cooking top burgers with smoked Gouda cheese slices.  Place turkey burgers on pretzel bun from the Meijer Bakery and top with Meijer Organics Dijon Mustard.)

Serve with:

Kale Chips

Makes 8 cups

1 bunch kale ($1.29)

1 tbsp. Meijer olive oil (on-hand)

¼ tsp. Meijer salt (on-hand)

Dash of Meijer pepper (on-hand)

Remove the center ribs and stems from kale; teat the leaves into 3-to-4-inch bite-size pieces. Toss with olive oil, salt and pepper. Spread on to 2 baking sheets coated with Meijer cooking spray. Bake at 350 degrees F until browned around the edges and crisp, 12-15 minutes.
