Brussels Sprouts with Caramelized Onions and Balsamic Vinegar
Ingredients
2 lbs Brussels Spouts
8 oz bacon cut in pieces
I large onion sliced
2 tbls butter
3 tbls or more balsamic vinegar
Salt and pepper to taste.
Preparation
Cook whole trimmed Brussels sprouts in boiling salted water for 8 minutes cool and then cut in half
Cook bacon till crisp and remove.
Add onion and cook till soft and caramelized
Add butter and melt completely
Add Brussels sprouts to pan and cook till heated through and lightly browned
Add balsamic and cook till evaporated.
Season and serve immediately
Variation
Proceed as above but also add cooked French chestnuts with the Brussels sprouts.
Substitute cider vinegar for the balsamic and add 1 1/2 tbls sugar.
