
Turkey Soup with Dumplings
1 Turkey carcass, cut into small pieces
7 cups water
1 cup chicken stock
10 oz. chopped tomatoes
1 cup celery, diced
1 cup carrots, diced
1 medium turnip, peeled and diced
1/2 cup onions, chopped
Dumplings
1 1/2 cups flour
3 egg yolks, beaten lightly
Stir egg yolks into flour. Add a pinch of salt if desired. If dough is too sticky add flour in small increments.
Put all soup ingredients into crock pot. Cover and cook on low 7 to 9 hours. Remove turkey carcass, separate meat and bones and return meat to pot. Drop dumpling batter by the teaspoon into the soup. Cover and cook on high for 20 to 30 minutes with lid closed.
