Greek Cucumber Dip
This is great as a dip with pita crisps, topping a baked potato, lamb burger falafel or grilled salmon.
You can use Greek style yogurt although it will make for a thinner dip, or you can strain your own yogurt by putting a coffee filter in a sieve and adding two pints regular yogurt suspending it over a bowl and placing in the refrigerator overnight. Kefir cheese or labane is readily available at middle eastern markets.
Ingredients
1 pint Kefir cheese or Labane ( yogurt cheese )
2 or 3 cucumbers peeled seeded and shredded
6 to 12 cloves garlic crushed ( or as much as you like )
3 tlbs chopped fresh dill
1 tsp dried mint
1tsp salt
3 tsp sugar
Juice half a lemon
½ cp olive oil
Preparation
1st Squeeze the shredded cucumber to remove as much moisture as possible
2nd Combine All ingredients and refrigerate at least an hour to combine flavors
