Ingredients
2 cans peas un-drained
1 14 oz can chicken broth
1 small onion chopped
1 stalk celery chopped
1 cp heavy cream
2 oz butter
2 tsp sugar
1 tsp dry thyme
1 tsp salt
3 tbls flour
Optional : Add 1 ounce cream sherry to finished soup
Preparation
Stove Top Method
First, place all ingredients but flour in a sauce pot and bring to a boil.
Second, reduce heat and simmer covered for 20 minutes.
Third, mix flour with a little water and stir in to soup. Simmer 5 minutes longer.
Fourth, puree with a stab blender or in a regular blender or food processor.
VitaMix Method
First, place all ingredients in the VitaMix container and process on high for 9 minutes.
Alternately, if you have a VitaMix with a hot soup setting run it in that setting twice.
