2 boneless, skinless chicken breasts
Fresh ground pepper
4 oz. goat cheese
6 sun-dried tomatoes, chopped
4 Tablespoons fresh basil, chopped
4 Teaspoons onions, minced
4 Teaspoons garlic, minced
8 Tablespoons butter
6 Tablespoons white wine
Juice from 2 large lemons
Brush chicken with olive oil, add salt and pepper to personal preference.
Grill, pan fry or bake * Just before the chicken is done add goat cheese on top and allow cheese to warm and soften.
While chicken is cooking prepare the sauce.
Sautee onion and garlic in 2Tablespoons butter until soft, do not let it brown.
Add white wine and lemon juice, reduce heat to medium-low and simmer 10 minutes.
Add remaining butter one Tablespoon at a time, until it melts.
Add chopped sun-dried tomatoes and basil, heat until hot.
Spoon lemon butter sauce over chicken.
