American Heart Association: Chicken with Mango Salsa and Sauteed Spinach

Chicken and Mango Salsa with Sauté' Spinach

6-5oz chicken Breasts

¼ tsp. - Sea Salt

¼ tsp. –pepper

Spinach

6 cup- fresh spinach

2 Tbsp. - olive oil

Sea Salt and white pepper to taste

Mango Salsa

½ cup – Red bell pepper small dice

½ cup red onion, small dice

½ cup- green bell pepper small dice

1 cup- of diced mango

2 Tbsps. - Cilantro fresh, chopped

1 Tbsps. -Olive oil

¼ tsp. – sea salt

½ tsp. white pepper

2 Tbsps. Lime Juice, fresh

 

Preparation:

Season Chicken with sea salt and pepper and sauté in skillet

Sauté fresh Spinach in separate skillet just until tender.

For Salsa, mix all ingredients together in large bowl. Top each Chicken breast with Mango Salsa.
